INGREDIENTS:
8 pcs. chicken breasts
1 ¼ cups butter
1clove garlic, pounded
Parsley
2 ½ cups bread crumbs
1 ½ cups cheese, grated
1 ½ tsp. salt
1 tsp. ground pepper
1 tbsp. butter
Red and green pepper, cube
FILLING (OPTIONAL):
1 cup chopped ham
1 egg yolk
3/4cup grated cheese, form into balls and freeze
PROCEDURE:
1. De boned chicken breast, leaving skin on, and pound to
flatten. Cut into two.
2. Dip chicken in a mixture of melted butter, garlic and
parsley.
3. Roll chicken in season crumbs (breadcrumbs, grated
cheese, salt and pepper).
4. Tuck in edges (fill with frozen ham balls) and form into croquettes.
5. Place in buttered Pyrex dish and bake 350 degrees for 45
minutes to 1 hour or until well done.
6. Set aside. Saute red and green bell peppers in a little
butter and season with salt and pepper, then spoon over the croquettes.
